Blueberry Crumble Bars

One of the best features of markets like ours is, without a doubt, the availability of fresh produce from local farmers. There’s something special about an orange that was grown and harvested just down the road, or a cucumber that was picked just yesterday.

While the fruits and veggies are delicious on their own, though, the quality of this fresh, local produce really shines when you use it as part of a bigger recipe in the kitchen.

TODAY Show guest chef Jocelyn Delk Adams just did a segment on farmers market finds and the yummy things you can bake with them. She opted to use blueberries, but said that you could easily swap the blueberries out for another berry that was in season. Adams made two dishes: a Blueberry Cheesecake Ice Cream and Blueberry Crumble Bars.

The  crumble bars, in particular, sounded absolutely divine, and Adams says they’re ‘like pie without the work,’ which sounds like a great deal to me. You can watch the video of Adams putting them together on the TODAY Show website, or just get the recipe here.
